I have no car today and very little in the fridge for dinner. Any suggestions?

Have a can of black beans and some fresh veggies.

  6. Cuban Black Beans "A Cuban lady down the street made these every Wednesday...wonderful stuff! She served the beans over a bowl of hot rice, and garnished them with salsa, a little sour cream, and shredded cheese. It was also good without the dairy products. Can substitute canned, rinsed beans to cut cooking time." Original recipe yield: 8 servings. Prep Time:15 MinutesCook Time:1 Hour 30 INGREDIENTS: 1 pound black beans, washed 1/4 cup olive oil 1 large onion, chopped 1 medium green bell pepper, chopped 6 cloves garlic, peeled and minced 5 cups water 1 (6 ounce) can tomato paste 1 (4 ounce) jar diced pimentos, drained 1 tablespoon vinegar 2 teaspoons salt 1 teaspoon white sugar 1 teaspoon black pepper DIRECTIONS: Place beans in a large saucepan with enough water to cover, and soak 8 hours, or overnight; drain. Heat oil in a medium saucepan over medium heat, and saute onion, green bell pepper, and garlic until tender. Into the onion mixture, stir the drained beans, water, tomato paste, pimentos, and vinegar. Season with salt, sugar, and pepper. Bring to a boil. Cover, reduce heat, and simmer 1 1/2 hours, stirring occasionally, until beans are tender.
  7. if you have rice you can toss all those together into a casserole with a little butter and salt (if you happen to have some cream soup, add that too!)
  8. Microwave them if you have a microwave oven and make them your meal.

  10. Mix the black beans with some rice and salsa and make a nice salad. Sounds yummy to me. I'll be right over.
  11. I bet you have something else. If any eggs - veggie omelet If have potatoes - baked with bean & veggie (sauteed on top) black beans, canned corn, canned tomatoe, hot sauce for a salsa with chips black beans and rice wtih steamed veggies got any pasta?
  12. Spagetti!! $4 You could invite some friends over and have them bring the salad and the garlic bread.
  13. If you have any tortillas you could pure the beans and add the veggies and make yourself a black bean burrito. I have done this many times and it is wonderful!
